Nothing spells love and comfort other than Bengali food! Aloo torkari and luchi also served with kochuri is a common street food found all over Bengal. While the luchi – Bengali fried flat bread is crispy and fluffy, the aloo torkari is soft and spicy – a combination that certainly is a crowd pleaser and also a reason why it’s sold widespread.
Ingredients for the Luchi and Aloo Torkari
Aloo Torkari:
300g Potatoes
Whole Yellow Peas (Motor)
10g Garlic (or ginger for niramish cooking)
3 Green Chillies Mustard Oil
2 Dry Red Chilies
1/4 tsp Hing
1/2 tsp Panch Phoron
2 tsp Masala Mix (Mentioned Below)
1 tsp Sugar
1/2 tsp Salt
1 tsp Dried Mango Powder (Aamchur)
1 tsp Garam Masala Water
Luchi:
400g All Purpose Flour (Maida)
1 tbsp Sugar
1/2 tsp Salt
20g Oil Warm water as required
Hot Vegetable Oil (Refined Oil) for deep frying
Masala Mix:
1/2 tsp Cumin Powder
1/2 tsp Coriander
1/2 Tumeric Powder
1/2 tsp Chili Powder
1/2 tsp Garam Masala
